Tomato-Basil Pasta

Albertsons It’s a Spring Thing, p. 21

4 slices bacon, chopped
½ lb. multi-grain angel hair pasta, uncooked
1 onion, chopped
2 cans (14.5 oz each) Italian-style diced tomatoes, undrained
¼ tsp. crushed red pepper
½ cup chopped fresh basil
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese

This recipe's from Albertons, but I got the ingredients at WalMart. Shhh, don't tell. 

Cook bacon in large skillet until crisp.  Meanwhile, cook pasta in large saucepan as directed on package.

This little piggy went to market.
Remove bacon from skillet, drain on paper towels.  Discard drippings from skillet.  Add onions to skillet; cook for 5 to 6 min. or until crisp-tender, stirring occasionally.  Drain tomatoes, reserving ½ cup liquid.  Add tomatoes, reserved liquid and crushed red pepper to onions; simmer 3 min. or until heated through, stirring occasionally.

Pasta: simple when prepared, elegant when served.  Win.

Drain pasta; return to pan.  Add tomato mixture, bacon and basil; toss to coat.

Add mozzarella; mix lightly.  Serve topped with Parmesan.

The recipe meant 1/4 c. grated Parmesan per person, right? ;)
