Chunky Gaucamole



2 medium plum tomatoes, seeded and finely chopped
¼ cup finely chopped red onion
1 or 2 cloves garlic, minced
2 tablespoons lime juice
1 tablespoon olive oil
¼ teaspoon salt
1/8 teaspoon freshly ground black pepper
2 ripe avocados, seeded, peeled and coarsely mashed
¼ cup snipped fresh cilantro
Tortilla chips

Pretty pretty!

It's like a tomato hysterectomy. (That's right. Now eat this guacamole.)

The onion was twins! Super fun!


Combine tomatoes, red onion, garlic, lime juice, olive oil, salt and pepper in a bowl.

Gotta love color-coordinated recipes.


 Gently stir in avocados and cilantro. 

This was my first experience with avocados, and I learned a lot.

Cover the surface with plastic wrap. Chill for up to 1 hour. Serve with tortilla chips.
