Bean Salad

Female Cookbook Volume 22, p. 54

1 can Mexican refried beans
200g [1 cup] shredded mild cheddar
1 small head of lettuce, shredded
3 tomatoes, shredded
2 tortilla trays

How did nature fit all this into one little bunch? Crazy.

Heat the refried beans according to the instructions on the can.

There were no instructions on the can. If there were, they probably would have said "put the beans in a pot and leave them there until they're pretty warm."

Place some of the beans on the tortilla trays.

I think that whoever wrote this recipe was working with bigger tortilla trays...

Top with shredded lettuce, tomatoes and cheese.

...because we only ended up using one tomato and less than half of the lettuce.

You may serve this with a dollop of sour cream of guacamole.

Or you may serve it with Fried Ham with Gravy.

My Rating: 3/5 "Not a bad flavor - a little bland, maybe. I would have felt better about not having so many leftover ingredients."
