Crabmeat Salad



½ pound flaked crabmeat, or flaked, steamed whitefish (cooled)
4 tablespoons fresh dill, minced
4 scallions, minced
1 cucumber
Juice of 1 lemon or more
¼ cup sliced water chestnuts
½ teaspoon sea salt

Slice cucumber in half lengthwise and scoop out seeds. 

HAVE AT YOU!

The easiest way I could figure out to do this was to score it with a knife, and then scoop the seeds out with a spoon.


Dice into 1/4 “ pieces. Combine all ingredients and mix gently. 

Happy imitation crab meats come from Walmart. 

I couldn't find fresh dill, so I used two teaspoons of the dried stuff. Not  as fun to chew, but the flavor was there. 

HAVE AT YOU! GENTLY.


Serve on individual beds of bibb lettuce accompanied by crackers, or as sandwich filling.

It's a bowl full of healthy.

My Rating: 3/5 "Fun, fresh flavors combined with an intriguing mix of textures make this a peppy little salad. It only keeps for about a day, though, so eat it up fast!"
