Baked Omelet Roll



6 eggs
1 cup milk
½ cup all-purpose flour
½ teaspoon salt
¼ teaspoon pepper
1 cup (4 ounces) shredded cheddar cheese

Place eggs and milk in a blender. 

An unusual sight!


Add the flour, salt and pepper; cover and process until smooth. 

An even MORE unusual sight!


Pour into a greased 13-in. x 9-in. x 2-in. baking pan. 

It spreads out nicely by itself. 


Bake at 450F for 20 minutes or until eggs are set.

It'll get prettier, I promise. 


Sprinkle with cheese. 

I used a little more cheese than the recipe called for. But then again, I usually do. :)

Roll up omelet in pan, starting with a short side. 

Careful - it's still a little hot.


Place with seam side down on a serving platter. Cut into 3/4-in. slices. 

Egg roll-up?

A visually arresting addition to a meal!

My Rating: 3/5 "A great solution for someone like me who usually ruins omelets. The eggs and flour and milk get all nice and fluffy and delicious in the blender. It didn't have a lot of flavor, but this could be easily fixed by serving it with something flavorful, or by rolling up other things in the eggs, like peppers or meat or any of your other favorite omelet fixins."
