Lemon Triangles


2/3 cup butter
2-1/2 cups granulated sugar
2-1/3 cups all-purpose flour
4 eggs
1/3 cup fresh lemon juice
2 Tbsp. grated lemon peel
Confectioner’s sugar

I found it helpful to go at the the peels with the grater from the inside, beginning with the white part.


Preheat oven to 350F. Line 13x9-inch baking pan with aluminum foil, then spray with nonstick cooking spray; set aside. In large bowl, with electric mixer, beat butter and ½ cup granulated sugar until light and fluffy, about 3 minutes. 

If you don't have an electric mixer, you can just cream it with a fork. LIKE GOD INTENDED.


Beat in 2 cups flour until fine crumbs form. Press into prepared pan. 

It doesn't feel that much like dough.

Gotta put some elbow into it.


Bake uncovered 20 minutes.

Aaand it doesn't look all that different. But it IS different!


Meanwhile, in medium bowl, with electric mixer, beat eggs, remaining 2 cups granulated sugar, remaining 1/3 cup flour, lemon juice and lemon peel 4 minutes or until light and fluffy; pour over hot baked crust. 

Sunny sunny cookies!

The clumps are ok. Now is not the time to be OCD. :)


Bake an additional 25 minutes or until lemon mixture is just set. 


See? Clumps are all gone.


On wire rack, cool completely. Using foil, lift out of pan. 


I should have greased the foil more than I did - the sides were stuck to it like cement.


Spray knife with nonstick cooking spray and cut into triangles. To serve, sprinkle generously with Confectioner’s sugar.


I don't know why triangles and not bars, except that triangles are obviously much fancier.



My Rating: 4/5 "It's hard to get them to stay pretty while you're cutting them into triangles. Barring that little hiccup, though, it's a spectacular, rich flavor and too gooey not to be good."
