Hot and Spicy Garlic and Peanut Chutney



15 – 20 garlic cloves
7 oz lightly roasted peanuts
6 – 8 large dried red chilies
Oil
Salt

The best way to make this is to grind all the ingredients together in a mortar and pestle until you have a thick, fairly smooth paste. Alternatively grind them in a blender, adding the oil a little at a time and scraping down the sides of the blender with a spatula with each addition. 

Here's how it works in the blender.

Add the oil a little at a time, starting with enough to fill the very bottom.

Then blend.

Then you'll need to add more oil, because this happens. (This step happens repeatedly.)

Eventually, you end up with something like this. 

Although it's technically a condiment, we just spread it on bread and ate it.

A simple but hearty meal!
