Spicy Turkey Quesadillas

Taste of Home Simply Tempting November 2010, p. 59

3 ounces fat-free cream cheese
¼ cup chopped fresh or frozen cranberries, thawed
1 tablespoon chopped green chilies
1-1/2 teaspoons honey
1 teaspoon Louisiana-style hot sauce
4 flour tortillas (6 inches)
1 cup diced turkey breast

In a small bowl, beat cream cheese until smooth. Stir in the chopped cranberries, green chilies, honey and hot sauce until blended. 

I halved the recipe to just make one for myself. 

All I could find were dried cranberries, but they did the job just swimmingly!


Spread over one side of each tortilla. 

Try to get the cranberries evenly spaced. It's more fun to eat that way.


Place turkey on two tortillas; top with the remaining tortillas.

Turkey, turkey cold cuts, close enough.



Cook quesadillas in a large nonstick skillet over medium heat for 2-3 minutes on each side or until lightly browned. Cut into wedges. 

And! Total amazingness!

My Rating: 5/5 "When I first read the ingredient list, I could not figure out for the life of me how cream cheese, honey, and hot sauce were going to mix and come out tasting good. But it's a WONDERFUL combination! And the turkey adds a nice, smoky sort of undertone, and the spice is a zesty accent that gives the overall flavor some pop! I promise that if you're into fun spins on quesadillas, this is well worth your time."
