Fire-Roasted Salsa

Taste of Home Simple & Delicious August/September 2010, p. 34

1 can (14 ½ oz.) fire-roasted diced tomatoes, drained
½ cup sliced onion
1/3 cup fresh cilantro leaves
1 Tbsp. lime juice
1 tsp. sugar
¼ tsp. salt


Be forceful with the onions. You gotta caress the cilantro a little, though. Seduce it. Take it to a movie first. 


In a food processor, combine the tomatoes, onion, cilantro, lime juice, sugar and salt. 

It'll be hard to go back to the stuff in a jar after this. 


Cover and process until desired consistency. 

DO NOT FORGET TO COVER. Otherwise: SALSA-TASTROPHE!

Served with chippies. :)


My Rating: 4/5 "The fire-roasted-ness of the tomatoes adds kick, but it's not melt-your-face spicy, either. Mostly it's just fresh, tangy flavors that make the chips go down happy.
