Scampi


2 garlic cloves
2 tablespoons butter or margarine
2 tablespoons olive oil
½ teaspoon dried oregano
½ teaspoon dried basil
½ pound cooked peeled shrimp
2 teaspoons lemon juice


Peel and finely chop the garlic. Melt the butter or margarine in a large frying pan over medium-high heat. Add the olive oil, garlic, oregano and basil and cook for 30 seconds, or until the garlic sizzles. Do not let the garlic brown or it will become bitter. Add the shrimp and lemon juice. If the shrimp are already cooked, just heat through. If you are using shrimp that are peeled and cooked but still frozen, cook them a few minutes longer, until they have thawed and are hot. 

Loving that sizzlin' sound. 

Serve immediately.

The cookbook suggested that it would taste good with rice. So that's what I did.

My Rating: 3/5 "It's food, and it's filling, but it didn't quite meet my expectations flavor-wise. I'll admit that I had over-high hopes because I love shrimp and because it smelled like heaven on earth while it was cooking, but the overall effect was essentially bland. It's really pretty, though, so if you have a food blog and you blog this recipe people probably won't know the difference. Unless you tell them."
