Maple Walnut Cookies


1 ½ cups rolled oats
3 cups pastry flour
1 teaspoon sea salt
1 ½ cups unrefined corn oil
1 cup maple syrup
1 ½ cups roasted, chopped walnuts
1 tablespoon vanilla
Water


Preheat oven to 350F. Mix oats, flour, and salt in a large bowl. Mix in oil, syrup, vanilla, walnuts, and enough water to make a moist cookie dough consistency. 

Porridge... 

...plus protein!



When well mixed, spoon close together onto a lightly oiled cookie sheet, flattening slightly. Bake for 18-20 minutes. 

They don't get much bigger as they bake, which is nice. Sometimes you want predictability in cookies.


My Rating: 3/5 "The batter for these is really good - all mapley and oatey and stuff. When you bake it, most of the maple flavor magically evaporates and the salt becomes even stronger. So what you get are kind of dry little balls of salty walnutness that are vaguely sweet. It's supposed to be a healthy cookie recipe, though, and it's satisfying in its way, particularly if you like combinations of sweet and salty."
