Tomato Kachumbar


½ cup lime juice
½ tsp sugar
Salt
6 tomatoes
½ cucumber, chopped
8 scallions, chopped
1 fresh green chili, seeded and chopped
1 tbsp chopped cilantro
1 tbsp chopped fresh mint

A very satisfying chop.


Mix the lime juice, sugar, and a pinch of salt together in a large bowl and stir until the sugar has completely dissolved.

 A good opportunity if you're into whisking things.


Add the tomatoes, cucumber, scallions, chili, cilantro, and mint and toss well to mix.

When I was a kid I envisioned "tossing" as hurling pieces of salad in the air and laughing with glee. The adult version is quite a disappointment.



Cover with plastic wrap and let chill in the refrigerator for at least 30 minutes. Toss the vegetables before serving. 

Once again, Indian cooking has managed to make vegetables delicious in new and exciting ways. Yay!
