Spinach-Cheese Casserole


2 slices bacon
½ cup chopped carrot
¼ cup chopped onion
1 11-ounce can condensed Cheddar cheese soup
2 10-ounce packages frozen chopped spinach, thawed and drained
1 cup cooked rice
¼ cup milk

In a 2-quart saucepan cook bacon till crisp; drain, reserving drippings. 

Turkey bacon, as per usual


Crumble bacon and set aside. In reserved drippings cook carrot and onion till onion is tender. 

I got pre-chopped carrot. #lazy


Stir in soup, spinach, rice, and milk.

Let's get MESSY.

And substantial!



Turn mixture into a 1-quart casserole. Bake, covered, at 375F till heated through, 35 to 40 minutes. Sprinkle with the crumbled bacon. Makes 6 to 8 servings.
