Gingerbread

Butter to grease baking dish
¼ cup butter
1 egg
½ cup buttermilk
½ cup light molasses
1 ½ cups flour
¼ cup sugar
1 teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
¼ teaspoon ground cloves
2 teaspoons ground ginger
1 teaspoon cinnamon
Powdered sugar (optional)
Whipped cream (optional)

Preheat the oven to 350F. Grease a 9-inch round baking dish with butter.

Melt ¼ cup butter in a saucepan over low heat. Be careful not to let the butter burn. Then turn off the heat and let the butter cool.

Crack the egg into a medium mixing bowl. Beat the egg with a wire whisk.

Add the buttermilk, molasses, and melted butter to the egg. Mix well.

First you mix the wet stuff...

Measure the flour, sugar, baking powder, baking soda, salt, cloves, ginger, and cinnamon into a large mixing bowl. Mix them together using a fork.

Then you mix the dry stuff...

Pour the liquid ingredients into the flour mixture. Stir to make a smooth batter.

Then you mix them together...

Pour the batter into the baking dish.

Bake the gingerbread on the center rack of the oven for 25 to 30 minutes.

Check to see if the gingerbread is done by inserting a toothpick into the center. If the toothpick comes out clean, the gingerbread is done.

Take the gingerbread out of the oven. Let it sit for about 5 minutes to serve it warm. Or let the gingerbread cool to room temperature.

And then let them all rock out in the oven.

Cut the gingerbread. Serve it with powdered sugar or whipped cream on top.

Cool WHip it is. :)

My Rating: 5/5 "This is fantastic. I got some kind of amnesia between portions so that each time I ate some I was blown away all over again by how good it was. Great blend of spices, and great texture. I know it's supposed to be a holiday treat, but I made it in June and still loved it!"
