Apple and Goat Cheese Salad

Taste of Home Simply Tempting, p. 12

6 cups torn mixed salad greens
2 medium apples, chopped
½ cup raisins
½ cup green grapes, halved
2 tablespoons olive oil
4 ½ teaspoons balsamic vinegar
1 tablespoon honey
1 ½ teaspoons lemon juice
1 garlic clove, minced
3 tablespoons chopped walnuts, toasted
2 tablespoons crumbled goat cheese


Braeburn apples, because they were cheaps.


In a large bowl, combine the mixed salad greens, apples, raisins and grapes. 

The combination of raisins and grapes is actually really, really nice for all it seems redundant.


In a small bowl, whisk the oil, vinegar, honey, lemon juice and garlic. 

This is GREAT. I want to make it for other salads, now!


Pour dressing over salad and toss to coat. Sprinkle with walnuts and goat cheese.

My Rating: 5/5 "I loved this. The balance of flavors was great, it was delicate, and when I paired it with some bread it made a nice lunch. I didn't use as much lettuce as it called for, because I was all about the auxiliary ingredients, but more lettuce would help it stretch to feed more people. Fresh food FTW."
