Chicken Adobo

Boulevard’s Favorite Recipes 2004-2005, p. 37

? chicken [however much you want to make]
8 oz (1 cup) apple cider vinegar
2 tbsp soy sauce
1 med yellow onion
2 bay leaves
½ tbsp chopped garlic
Jasmine white rice


I'm assuming they didn't mean an entire, unadulterated onion. So I cut mine up into little shoestrings. 


Put all ingredients except rice in a pot and cook on med. heat for about 40 mins – turn down heat to low then cook for 20 mins. 

Chicken thighs- mostly because they're cheaper.

Simmering in delicious juices.


Serve over white jasmine rice.

Paired with an Oktoberfest, which complemented the flavor really well.


My Rating: 5/5 "THIS IS SO SIMPLE AND SO, SO GOOD. We couldn't stop talking about how much we loved it. The cider vinegar and the onions complement each other absolutely perfectly, and the chicken gets so tender you hardly even need a knife to cut it. Epic win."
