Spicy Mexican Cheese and Bean Dip


Snack crackers
1pkg. (16 oz.) Velveeta, cut into ½-inch cubes
1 can (15 oz.) black beans, rinsed
1 can (11 oz.) corn with red and green bell peppers, drained
1 cup hot chunky salsa

Combine all ingredients except snack crackers in a microwaveable bowl.

If you ignore the Velveeta, it all looks pretty healthy, eh?


Microwave on High 5 min. or until Velveeta is completely melted, stirring after 3 min.

All mixed! And very appealing.



Serve with snack crackers. 

My Rating: 5/5 "I know Velveeta is a terrible invention and I know that this is only a sometimes (very, very occasionally) food, but this dip is delicious. I served it at a little party we hosted, and people gobbled it up! You know, occasionally you just need stuff like this."
