Apple Pudding

Cooking the Jewish Way, p. 189

3 matzos
3 large cooking apples
1 cup sugar
2 oz. butter or margarine
3 eggs
½ teaspoon cinnamon
8 oz. raisins or sultanas, or mixed


Soak matzos in water and squeeze until dry, then place them in a bowl. 

This doesn't take long. Two minutes-ish, tops.

"Dry" is a relative term. I think they just basically want you to wind up with matzo mush.


Peel and cut apples into thick slices and add to matzos. Then add fruit, sugar, cinnamon and well beaten eggs. Melt the fat and stir in. Adjust sweetness. 

Pictured: Actually not as many raisins as the recipe called for. 


Pour mixture into greased baking dish and bake in moderate oven for 45 minutes. 

And then it's puddin'!


My Rating: 4/5 "This is actually quite tasty - and for anytime, not just as a kosher-for-Passover dish. It's super sweet, but the matzo gives it a mellow sturdiness. There's nice variation of textures as well."
