Cookie Monster's Me-Love-Mini-Meat-Loaves


1 egg
1 pound ground meat for meat loaf (a mix of beef, pork, and veal is best for flavor)
1 cup uncooked old-fashioned oatmeal
1 onion, grated
1 carrot, shredded
1/3 cup ketchup
¼ cup grated Parmesan cheese
1 teaspoon salt
¼ teaspoon pepper
Additional ketchup for topping (optional)

Preheat the oven to 350F. Lightly coat 8 muffin cups with vegetable oil or nonstick cooking spray.
Crack the egg into a small bowl. (If any pieces of eggshell fall into the bowl, take then out with your fingers before you start stirring. Wash your hands after you’ve picked out all the pieces of shell.) Then, in a large bowl, combine the ground meat, oatmeal, onion, carrot, egg, ketchup, Parmesan cheese, salt, and pepper. 

Grating an onion sounded like a nightmare, but I also would have done better to chop them into much smaller bits as I rebelled against the recipe.


With clean hands or a wooden spoon, mix until well-blended.

Divide the mixture up into 8 equal-sized balls.

Place a ball of meat into each muffin cup and press down lightly. If you like, brush the top of each mini loaf with ketchup.

I opted for no extra ketchup, because diet. But I'm sure it would have been delicious!



Bake until meat loaves are no longer pink in the center, 20 to 25 minutes.

My Rating: 4/5 "These are damn good. They would have been even better if I'd made the onion into smithereens like I was supposed to. But however you slice your alkaline vegetables, these mini meat loaves are moist, flavorful, and only about 200 calories each!
