Blueberry Cream Cheese Muffins


1 (18.25 ounce) package blueberry muffin mix [enough to make 12 muffins]
1 (8 ounce) package cream cheese, softened
¼ cup granulated sugar

Prepare muffin mix according to package directions. 

I used a just-add-water mix, which was nice.


Divide ½ of batter among 1 (12-count) greased or paper lined muffin pan.

In medium bowl, combine cream cheese and sugar, using an electric mixer, beat on medium speed 1 minute. 

The delicious magic in the middle!


Divide cream cheese among batter in muffin pan. Top with remaining batter.

You end up with a layer of mix, a layer of delicious cream cheese, and a topping of mix.



Bake in a preheated 400F oven 18-22 minutes or until golden brown.

My Rating: 5/5 "So, so simple to make and so delicious! The ingredients are cheap, but the cream cheese adds a nice hint of richness to the usual muffin-mix flavor that makes you feel decadent.
