Holiday Teiglach


DOUGH
3 eggs
1 teaspoon vegetable oil
1 teaspoon sugar
¼ teaspoon salt
Approximately 1 ½ cups all-purpose flour
HONEY SYRUP
¾ cup light honey
1/3 cup sugar
1 teaspoon ground ginger
1 cup chopped walnuts
¾ cup shredded coconut

Preheat the oven to 375F. Line a cookie sheet with parchment paper and lightly smear with vegetable oil.

DOUGH: In a bowl, whisk together the eggs, oil, sugar, and salt. Blend in the flour to make a very soft dough. 

And it's already sticky.


Turn the dough out onto a lightly floured board, adding just enough flour, if necessary, to make it easy to roll. With your hands, roll the dough into long ropes or snakes, about ½ inch wide. 

"I think I see... SNAKE... SNAKE... oooh, there's a snake."


Pinch or cut off ½-inch pieces. 

So you make little dough nuggets. 


Place all these little pieces on the cookie sheet.

Bake, Shaking the sheet occasionally, until the dough pieces puff and are golden brown, (15 to 20 minutes).

And then bake 'em!



SYRUP: In a saucepan, heat the honey and sugar together and boil very gently for 3-5 minutes until just amber-colored. Lower the heat, then stir in the ginger, the nuts, and the baked puffs or teiglach, tossing to coat them. Spread the mixture out onto a lightly greased baking sheet, (using went hands). Sprinkle it with coconut and allow it to harden (or place it in the freezer on the baking sheet for about 30 minutes), and then cut it into bite-size pieces. 

I used canned coconut because it was cheaper. 


Alternatively, mound the mixture in the center of a serving platter and allow it to cool and harden. Take pieces or sections as required, with 2 spoons, or simply pull off a piece—this is a sticky dessert. 

A nice little serving!

My Rating: 3/5 "Warning: This is extremely rich and extremely high-calorie and it will make you extremely sticky. I did adore the combination of honey, coconut, and ginger in the syrup, though, and making the little pellets is so much fun!"
