¼ cup sauerkraut, rinsed
Dash
caraway seeds
1 slice
rye or wholewheat bread, toasted
1
teaspoon mustard
1 ounce,
cooked, sliced turkey
1
(1-ounce) slice Swiss cheese
4 slices
tomato
In small saucepan or microwave, heat sauerkraut with
caraway seeds. Drain well.
Spread toast with mustard and top with turkey.
| Don't toast it too much the first time, because it's going right back in that oven. |
Spread with sauerkraut over turkey and top with cheese.
Heat in microwave or toaster oven until warmed through and
cheese begins to melt. Top with tomato slices.

My Rating: 4/5 "Turkey is an interesting healthy substitute for corned beef in the traditional reuben, and open-faced sandwiches always make me feel fancy. Careful not to put it too close to another dish, though - the bread gets soggy."
