Warm Tomato Saute


1 tablespoon olive oil
1 small or medium red onion, sliced
1 or 2 cloves garlic, minced
2 pints cherry tomatoes
½ cup julienned fresh basil leaves
Salt and pepper to taste
2 tablespoon balsamic vinegar


Red onions are always the perfect accent.

Heat a skillet and add the oil. Saute the onions and garlic over medium heat until soft, about 3 minutes. Turn the heat to high and add the tomatoes and basil, tossing until the tomato skins begin to wrinkle.

It's gorgeous despite having a color scheme like a 1970s Burger King.

Basil-in-a-tube was not the best choice. If you can find fresh basil instead, use it.

Remove the skillet from the heat. Add salt and pepper to taste and then the balsamic vinegar. Toss gently to mix. Serve warm. 

Served up with garlic bread and Pesto Pasta!
