tablespoon olive oil
1 small
or medium red onion, sliced
1 or 2
cloves garlic, minced
2 pints
cherry tomatoes
½ cup
julienned fresh basil leaves
Salt and
pepper to taste

tablespoon balsamic vinegar

Heat a skillet and add the oil. Saute the onions and garlic
over medium heat until soft, about 3 minutes. Turn the heat to high and add the
tomatoes and basil, tossing until the tomato skins begin to wrinkle.

| Basil-in-a-tube was not the best choice. If you can find fresh basil instead, use it. |
Remove the
skillet from the heat. Add salt and pepper to taste and then the balsamic
vinegar. Toss gently to mix. Serve warm.
