Peach Cobbler


Butter to grease skillet or baking pan
FRUIT FILLING:
4 cups sliced peaches, fresh or frozen
2 tablespoons flour
½ teaspoons cinnamon
1 cup sugar
CRUST:
1 cup flour
1 tablespoon sugar
2 teaspoons baking powder
¼ teaspoon salt
3 tablespoons butter
6 tablespoons half-and-half
Flour for cutting board
1 teaspoon cinnamon
1 tablespoon sugar
1 pint ice cream (optional)

Fresh peaches are exponentially better in this, if you can get them.

Preheat the oven to 425F. Grease a cast-iron skillet or 9-inch square baking pan with butter.

To make the fruit filling, mix the peaches, flour, and cinnamon in a large mixing bowl. Add the sugar a little at a time until the fruit is sweet enough for your taste.

Spoon the fruit mixture into the greased skillet or baking pan.

If the crust weren't also tasty, you could probably get away with just baking and eating this.

To make the crust, put a sifter into a medium mixing bowl. Measure the flour, sugar, baking powder, and salt into the sifter. Then sift them into the bowl.

Cut the butter into small chunks and drop them into the flour mixture. The use a pastry cutter or fork to cut the butter into the flour mixture until you have pea-sized lumps.

Add the half-and-half. Stir quickly with the fork just until all ingredients are moistened.

Sprinkle flour on a cutting board. Place the dough on the board. Knead for about 30 seconds. To knead, push down on the dough and then fold it in half. Repeat.

Sprinkle more flour on your cutting board. Cover the dough with a sheet of wax paper. Roll it out from the center until it is about ¼ inch thick.

Cut the crush into shapes with cookie cutters. Arrange them on top of the fruit.

Mix the cinnamon and sugar together in a small bowl. Sprinkle the mixture on top of the cobbler. Bake the cobbler for 30 to 35 minutes, or until the crust is browned.

Bubbling and hot!


Remove the cobbler from the oven. Let the cobbler cool for about 10 minutes, and serve. Top with ice cream if you’d like.

We omitted the ice cream for calorie reasons. But it was still delicious by itself!
