Bagels with Smoked Salmon and Wasabi Sour Cream

4 plain bagels
¾ cup sour cream or crème fraiche
2-3 teaspoons wasabi paste
Freshly ground black pepper
8 oz. smoked salmon
TO SERVE:
Chopped chives (optional)
Lemon wedges (optional)

Cut the bagels in half and toast lightly on both sides. Put the sour cream or crème fraiche and wasabi paste in a bowl and beat until evenly mixed. 

Trying something new from the local co-op!

Add freshly ground black pepper to taste.

Ready for easy assembly!

Spread 4 bagel halves with the wasabi mixture. Top with the smoked salmon and chives, if using, then add the remaining bagel halves. 

I recommend using the chives. They're nice and chive-esque.
Serve with lemon wedges, if using.
