Yellow Rice with Peas


1 tbsp. oil
½ c. chopped onion
1 c. long-grain rice
2 tsp. Italian seasoning
½ tsp. ground turmeric
2 cups chicken broth
1 cup frozen peas


Heat oil in large skillet. Add onion; cook and stir 3 minutes. Add rice, Italian seasoning and turmeric; cook and stir 2 minutes. Stir in chicken broth. 

The rice is already yellow - that turmeric is potent stuff!


Bring to boil; cover. Simmer 15 minutes. Stir in frozen peas; cover. Cook 10 minutes or until rice is tender.

Served up with some of Matt's awesome buffalo wings!

My Rating: 3/5 "It's nice and substantial and a great combination of filling and low-calories. My only misgivings are that 1) I don't like peas, and this has a lot of them, and 2) This is really bland for a recipe from a spice company. But if you want to eat healthy, this is a great option!"
