Banana Nut Pancakes


No-stick cooking spray
1 egg
2/3 cup milk
2 tablespoons vegetable oil
1 [7.6 oz] package banana nut flavored muffin mix

Coat electric griddle or large skillet with no-stick cooking spray. Heat griddle to 350F or skillet over medium-high heat.

Whisk egg in medium bowl. Whisk in milk, oil and muffin mix just until large lumps disappear.

Pour ¼ cup batter for each pancake onto hot griddle or skillet. Cook 1 to 2 minutes or until bubbles begin to break on surface. Turn and cook an additional 1 to 2 minutes or until golden brown. 

I finally figured out the ideal cooking window for these. After I burned a few (see below).

You can serve these with either syrup or whipped cream. I did syrup, Matt did ReddiWhip, and both were delicious.

My Rating: 4/5 "These actually do have a nice banana nut flavor and a nice pancake consistency. I was skeptical about making pancakes from a muffin mix, but they worked out really well! The only caveat is that they cook for a LOT less time than the recipe says they're supposed to if you actually turn the heat up to medium-high. Either turn the heat down or flip them the instant you see bubbles start to form. (At least that was my experience with my oven and my frying pan - yours may vary.)"
