Med Ribbon Salad

Delicious Living, August 2016, p. 37

¼ cup farro, cooked to make ½ cup
1 cup zucchini ribbons
1 cup spinach
½ cup halved cherry tomatoes
¼ cup diced red onion
2 tablespoons basil pesto


Check out this GIANT FRIGGIN' ZUCCHINI that one of my husband's curling buddies grew.

The only way I could figure to make zucchini ribbons was to go at one with a peeler. It worked out well, fortunately.

Such pretty ingredients!


Toss farro, zucchini, tomatoes, onions and pesto in a large bowl; season with salt and pepper. Serve over spinach. 

Served up! (That's barley instead of farro, but it worked out well.)
