Corn Pancakes or Waffles


1 pkg. corn muffin mix
1 egg
2 Tbsp. shortening
½ cup milk


Preheat griddle or waffle iron to medium heat (350F to 375F) or as manufacturer directs.

Griddle/waffle iron is ready when a few drops of water sizzle and disappear. Grease lightly. Combine ingredients until large lumps disappear. 

Hurry up! There's a hot iron waiting!


For pancakes, use 1/4 cup batter. When pancakes bubble around edge, turn. Pancake is done when bottom is lightly browned. For waffles, use ¾ cup batter. 

I was really excited to break in our new waffle maker!


Cook until steaming stops.

Served with syrup. Because waffles.

My Rating: 4/5 "You may already be aware of my opinion that anything cornbread is heavenly. This was no exception. The waffles are delicate and fluffy but still have nice substance thanks to the cornmeal. The flavor is really comforting. So much better than the frozen toaster things!"
