Linguine with Lemon, Broccoli & Bacon


½ (16 ounce) package linguine
½ (16 ounce) package thick sliced bacon, chopped
1 (16 ounce) package frozen broccoli florets
1 tablespoon chopped garlic
¼ cup fresh squeezed lemon juice
¼ cup olive oil
1 tablespoon chopped fresh thyme
2 teaspoons lemon zest
½ cup shredded parmesan cheese

Prepare pasta according to package directions; drain.

Meanwhile, in large skillet, over medium-high heat, cook bacon until crisp; remove to paper towels.

I was a little floored when I realized that I was using up most of a thing of  turkey bacon for this.


Drain off excess grease from pan. Add in broccoli and garlic; saute until heated through.

Definitely should have used a bigger skillet.



Add pasta, lemon juice, oil, thyme and zest; toss to coat. Salt and pepper to taste, continue cooking until heated through. Toss with bacon and cheese.

It's really hard to get this to mix together well.

But if you can kind of get it done it's very pretty!

My Rating: 4/5 "The lemon and olive oil together on the pasta are amazing! Broccoli is a nice addition - I'm universally a fan of broccoli cooked in garlic. My only qualm with this is that it's DRENCHED in bacon. I mean, I like bacon, but this is excessive. I'd try dialing it back if I made this again."
