Garlic and Herb-Scented Couscous

1 box couscous
2 cloves minced garlic
3 Tbsp. olive oil
1 tsp. chopped fresh parsley
¼ tsp. dried oregano
¼ tsp. dried mint
¼ tsp. salt
¼ tsp. pepper

Prepare the couscous according to package directions.

In a saucepot, heat the olive oil and garlic over medium heat for one minute or until the garlic begins to sizzle.

At which point your kitchen will smell like everything amazing in the world.

Remove the pot from the heat and add the herbs. Allow the mixture to cool completely.

Drizzle the infused oil over the couscous and season with salt and pepper.

I tried a black lava salt with this. It was darn delicious - and pretty!

Serve warm or at room temperature.

My Rating: 4/5 "Loved this. It's simple but tasty. And it's low-calorie. And vegan. And the leftovers taste just as good as the original. It's a win."
