Honey-Glazed Salmon

InterCourses, p. 38

2 (6-ounce) salmon fillets
Salt and pepper to taste
2 teaspoons honey
2 teaspoons chopped basil


Rinse the salmon and pat dry. Place, skin-side down, in a greased baking dish. Season with salt and pepper. Coat with the honey and top with the basil. 

A soothing, peaceful food.

Bake at 350 degrees for 15 minutes or until done (about 10 minutes per inch of thickness. May substitute or add other herbs of your choice for the basil. 

Served up with a little coleslaw! (But the slaw is incidental. This is amazing by itself.)

The honey is a pleasant accent to the fish without overwhelming it. The basil adds a nice crispness to the flavor. You'll like yourself better for making this."
