Key Lime Pie


1 ½ cups finely ground honey graham crackers
1/3 cup granulated sugar
6 tablespoons butter, melted
3 large egg yolks
1 (14 ounce) cans sweetened condensed milk
1 cup key lime juice
Whipped cream

In medium mixing bowl, combine finely ground crackers, sugar and melted butter; mix until well combined. 

The fun part is whacking the mess out of some graham crackers with a rolling pin.


Press into a 9-inch pie plate. Bake in a preheated 350F oven 8-10 minutes.

I gave up trying to get it to come artfully up the sides and just made a thick bottom-only crust. It worked ok.


Meanwhile, place egg yolks in a large mixing bowl. Using an electric mixer, beat on high until light and fluffy. Reduce speed to medium and gradually add condensed milk; beat until thickened (about 2 minutes).

This really does get magically thicker!



Reduce speed to low; slowly add in lime juice until just combined. Pour into prepared graham cracker crust. Return to oven and bake 15-20 minutes or until filling it set. Cool completely. Refrigerate until ready to serve. 

So smooth and cool and pristine!


Serve with whipped cream, if desired.
