Mango Coconut Smoothie

Delicious Living July 2017, p. 41

24 ounces mango (about 2-3 large mangos), cut into 1-inch pieces
2 cups coconut water
Juice of ½ lime
Fresh mint leaves

In a blender, combine mango and coconut water. Squeeze lime juice into the blender; blend until smooth. 


Taste the tropics, y'all.

Garnish with fresh mint.


Happy little garnishes! (I was pleased with the effect, but my husband demanded to know why there was a green thing in his smoothie.)


My Rating: 4/5 "This is kind of a thin smoothie, but it's still refreshing. Having tropical fruit in the middle of winter was a real treat and makes you feel better about the gray outdoors. Plus there's a fancy garnish!"
