Lemon-Lime Cake



1 package lemon flavored cake mix
Additional ingredients to prepare cake mix per package instructions
1 (14 oz.) can sweetened condensed milk
1/3 cup lime juice
1 teaspoon finely grated lime peel
1 (8 oz.) container frozen whipped topping, thawed
Lemons and limes, for garnish

Prepare cake mix according to package baking instructions. Bake in a 13 x 9-inch pan according to baking instructions. Cool 10 minutes.

Poke a few dozen holes in cake with round handle of wooden spoon, about 1-inch apart.

I used a chopstick.


Stir sweetened condensed milk, lime juice and lime peel in medium bowl. Pour slowly into holes and over top of cake. Chill 1 hour.

My lime gloop came out kind of thick and it didn't do a great job of sinking down into the holes. I don't know if the solution is bigger holes or thinner gloop, but if you make this you might want to try one of the two.


Spread whipped topping over top of cake. Garnish as desired.

I desired to do this, apparently.



My Rating: 4/5 "I adore lemon and lime things, ergo I thought this was awesome. Even though the poke-cake-ness didn't quite work out, I loved the tartness of the lime under the cool sweetness of the Cool Whip frosting. If you're looking for a summery treat, this fits the bill!"
