Pebbles Cupcakes



¼ cup (1/2 stick) butter or margarine
1 pkg. (10-1/2 oz.) miniature marshmallows (6 cups)
1 pkg. (11 oz.) Cocoa Pebbles cereal
1 can (16 oz.) ready-to-spread frosting
¼ cup colored sprinkles (optional)

Microwave butter in 4-qt. microwaveable bowl on HIGH 45 seconds or until melted. Add marshmallows; mix to coat. Microwave 1-1/2 minutes or until marshmallows are completely melted and mixture is well blended, stirring after 45 seconds. Add cereal; mix well. 

I halved the recipe to just make twelve, which gives you a nice workable amount of stuff to stir.


Press cereal mixture firmly into 24 lightly greased muffin pans to form “cupcakes,” using about 1/3 cup cereal mixture for each cup. 

I am currently blown away and ecstatic about the idea that you can do this with literally any Rice Krispie Treat-appropriate cereal.


Cool; remove from pans. Spread with frosting just before serving. Decorate with sprinkles.

TIP: For best results, spread “cupcakes” with frosting as you need them. Wrap unforsted cupcakes securely; store in cool, dry place until ready to frost and serve.

Mini “Cupcakes”: Prepare as directed, using lightly greased miniature muffin pans and pressing about ¼ cup of the cereal mixture into each cup. Makes about 4 dozen or 24 servings, 2 mini cupcakes each.

Substitute: Prepare as directed, using Fruity Pebbles cereal.

As you can see, we made that substitution and paired it with some Funfetti frosting. Worth it.

My Rating: 4/5 "Pebbles cereal is always a guilty pleasure. Making it a frosted cupcake only increases the glee you get from eating it. It's also super-snappy to make, so if you have to feed a crowd in a hurry this recipe is your friend. Be mindful of the TIP outlined above, though, because like all Krispie Treats this dries out if you don't take care of it well."
