Crab Louie Sandwich



1 Tablespoon ketchup
1 Tablespoon onion, minced
2 teaspoons lemon juice
1 Tablespoon capers (with the juice)
1 package (8 oz.) flake style imitation crab meat
4 toasted hoagie rolls, buttered (optional)
1 cup shredded iceberg lettuce
8 tomato slices
2 hardboiled eggs, sliced
¼ cup black olives, sliced

Mix together the first 4 ingredients then gently toss in imitation crab flakes. 

I remain the gauche kind of person who really enjoys imitation crab meat.


Dividing evenly, layer each roll with the shredded lettuce, tomato slices, sliced eggs and sliced olives then top with crab mixture.

I'll explain below why the sandwich ended up being so overstuffed.



My Rating: 3/5 "This sandwich is really confusing. The crab mixture is delicious and if you ate it by yourself I think you'd be happy. But the other dressings seem like they belong on their own, totally separate sandwich that has nothing to do with crab. And the weirdest part is the proportions of stuff on the sandwich. If you follow the recipe directions you end up with a lot of bread and some scraps of stuff in the middle - it's not enough filling. So I doubled the amount of stuffin' in the sandwich, which as you can see above resulted in a really chubby sandwich that I couldn't quite close. The sweet spot is probably somewhere in the middle. Anyway, mess with this how you see fit, but know that it's all kinds of weird."
