Sweet Pea Soup

1 tablespoon olive oil
½ cup chopped onion
1 garlic clove, minced
1 can (15 oz.) sweet peas, drained
1 can (14.5 oz.) chicken broth
1 tablespoon lemon juice
½ tablespoon fresh dill, chopped
1/8 teaspoon salt
¼ teaspoon pepper
¼ cup sour cream

In a large saucepan, saute onion and garlic in oil until tender. Remove from heat. Stir in peas, broth, lemon juice, dill, salt and pepper.

The "remove from heat" part is crucial if you want this to be safe for the blender.

Place mixture in a blender; cover and process until pureed.

That's certainly pea soup!

Return to saucepan and heat thoroughly. Top with spoonful of sour cream when serving.

Miraculously, it comes out with a pleasing appearance.

My Rating: 4/5 "I really enjoyed this despite the fact that I detest peas. Of course I'm a sucker for lemon and dill, so that's probably what made the difference. Plus the sour cream is a nice cool anchor. There's still a pea-like flavor to this, a pea essence, you might say a pea-ness. But everything combines together in a really enjoyable way so even if you're not a pea person (or generally a green vegetable person) there's something for you here."
