Kedgeree



2 cups flaked cooked white fish (preferably Swordfish or Halibut)
1 ½ cups cooked rice
2 hard cooked eggs
4 tablespoons butter
Salt and pepper

There's some prep work for this one, so budget your time accordingly. (I used walleye and it was quite pleasant.)

Once the fish is thoroughly cooked it should flake easily between two forks.


Heat fish, rice and chopped egg whites in butter. Season and sprinkle with grated egg yolks.

The yolks make everything so cheerful!

Now that's some comfort food right there.


My Rating: 4/5 "I was prepared for this to be bland and boring (since it's British food), but it was actually quite nice! I think cooking it in the butter makes the difference. It's absolutely packed with protein and has a really pleasant overall texture. Look into the history of the dish if you make it - fascinating stuff!"
