Bruschetta Chicken Bake



1 can (14.5 oz.) diced tomatoes, undrained
1 pkg. (6 oz.) stuffing mix for chicken
½ cup water
2 cloves garlic, minced
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 tsp. dried basil leaves
1 cup shredded mozzarella cheese

Heat oven to 400F.

Mix tomatoes, stuffing mix, water and garlic just until stuffing mix is moistened.

You will not believe how much better Stove Top is with a little fresh garlic. Seriously try it.


Layer chicken, basil and cheese in 3-qt. casserole sprayed with cooking spray.

Top with stuffing mixture.

Bake 30 min. or until chicken is done.

Golden and done!

Served up with a nice spinach salad.



My Rating: 4/5 "This is damn nice. The cheesy layer makes it fun and the savoriness of the stuffing layer is quite well-placed. It's pretty low-cal, too. I'd recommend having something to go with it, because it's not quite enough by itself, but if you do that you're good to go."
