Skillet Chili Mac & Cheese

Albertsons It’s a Spring Thing, p. 8

12 oz elbow macaroni
1 ½ pounds 80% lean ground beef
1 (1.25 oz) package chili seasoning mix
1 (14.5 oz) can diced tomatoes, drained
1 pound processed cheese loaf, cubed
1 cup 2% milk
2 tablespoons butter

In a large saucepan, prepare macaroni according to package directions; drain.

Meanwhile, in large skillet over medium heat, cook and crumble beef until no longer pink; drain.

It's a lot of juicy, delicious beef.

Stir in chili seasoning mix and tomatoes. Set aside.

A thing of beauty!

Add cheese, milk and butter to macaroni. Cook over low heat, stirring frequently, until cheese is melted.

This is actually really good mac 'n' cheese by itself

Stir in beef mixture.

GLORY

My Rating: 5/5 "I know some of you take hardline stances against Velveeta, but stay with me: This is DELICIOUS. Like, the spice mixture is perfectly on point, the texture is the ultimate comfort food texture, and there's also a vegetable in it. I couldn't get enough of this. It's super-filling, too! Food doesn't have to be high-class to be awesome."
