Cheesy Rice with Chicken & Broccoli



1 ¾ cups 2% milk, divided
1 cup long grain white rice
1 tablespoon olive oil
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 (16 ounce) package frozen broccoli cuts
½ (32 ounce) loaf processed cheese spread, cubed
2 tablespoons butter

In large saucepan, prepare rice according to package directions using 1 cup milk to 1 cup water.

Meanwhile, in large skillet, heat oil over medium-high heat. Add chicken; salt and pepper to taste. Saute until cooked through and slightly browned.

Add broccoli and continue sautéing until heated through; transfer to saucepan with cooked rice. 

Bite-sized pieces of chicken are super-satisfying to eat. I don't know why, but they are.


Add in remaining milk, cheese, and butter. Cook, stirring frequently, until cheese is melted and heated through.

Say cheese! (Because saying "Velveeta" doesn't really do the trick, does it?)

My Rating: 4/5 "Chicken? Broccoli? Cheese? Yes, yes. These are all good things. I hate to admit it, and I will deny saying this later, but there's actually a little too much cheese in this. It's a little soupy and that takes away from its comfort-food nice-to-chew appeal. That said, it's a really nice flavor and if you're into broccoli-cheese things it'll be right up your alley."
