Cabbage & Cashew Stir-Fry

Delicious Living November 2016, p. 31

1 tbsp avocado oil
3 tbsp raw cashews
1 tbsp grated ginger
½ small head of cabbage (about 12 oz.), thinly sliced
¼ tsp salt
2 tbsp water

Fresh ginger is everything.

Warm oil in a skillet over medium heat. Add cashews and ginger; cook about 2 minutes or until cashews are browned and ginger is fragrant. Add cabbage, salt and water. Cover and cook 10 minutes or until cabbage is tender, stirring occasionally.

Boiled cabbage always get a nice noodle-like consistency that makes it very satisfying to eat.

Served with a little store-bought sweet and sour chicken.

My Rating: 4/5 "This is a lot more interesting than you think it's going to be. Boiled cabbage has a great texture, and cooking it with fresh ginger like this makes it taste quite fresh. The cashews add a delightful crunchy counterpoint. It's still not the most flavorful thing in the world, but as a side dish to something meaty or savory it's quite on point!"
