Fiesta Breakfast Burrito



1 Tbsp. vegetable oil
1 large onion, thinly sliced
½ green bell pepper, thinly sliced
½ red bell pepper, thinly sliced
16 fully cooked pork sausage patties
1 (16 oz.) carton egg substitute
4 burrito size flour tortillas
1 (8 oz.) package finely shredded fiesta blend cheese

In a saute pan on medium heat, heat oil, then add onions and peppers and saute until golden brown. 

Ah, the illusion of health.


Add patties and cook until hot.

Get the sausages a little crisp on the edges for some nice texture.


Remove mixture from pan and set aside.

Cook egg makers in the same saute pan with a little vegetable oil.

Even add all ingredients to tortillas. 

The illusion of health: Gone.


Finish by topping with shredded cheese. Wrap each burrito and serve warm.

I'm not the best at wrapping burritos, but I generally get the job done.



My Rating: 3/5 "The overall flavor of this is really nice. It's like a meatier, more robust version of the breakfast burritos at McDonald's, which were one of my favorite things to eat as a kid so this was an unexpected nostalgia trip. I took issue with a couple of things, though: 1) This thing is HUGE. Like, you can cut the servings in half and still be stuffed like you had a full meal because the ingredients are so heavy. In fact, I really do recommend that you cut the servings in half if you want to avoid eating over half of your calorie allotment for the day in one meal. Also, 2) Just Say No to Eggbeaters. They're not tasty, and if your stomach chemistry is anything like mine you'll feel really weird after you eat them. Just use eggs. Like, the kind from a chicken's butt. So anyway, this is tasty, and would be even better with a little retooling."
