Classic Macaroni & Cheese

½ package (8 oz.) elbow macaroni, uncooked
3 Tbsp margarine or butter
3 Tbsp all-purpose flour
2 ½ cups milk
½ tsp salt
1/8 tsp pepper
¼ cup onion, minced
2 cups (8 oz.) shredded cheddar cheese
½ cup bread crumbs

Cook pasta according to package directions. Preheat oven to 350F. In a medium saucepan, melt margarine or butter. Stir in flour. Gradually stir in milk. Cook, stirring constantly over medium heat, until sauce thickens. Stir in salt and pepper. Add onion and cheese; stir until cheese melts.

The co-op was out of onions so I made do with a shallot. It was pleasant!

Stir cheese sauce into cooked pasta.

This actually seems pretty good if you wanted to just eat it like this.

Spoon into greased 2 quart baking dish. Top with bread crumbs. Bake 30 minutes.

But not! We must make it crispy on top! Apparently!

Served - a nice little meal by itself.

My Rating: 3/5 "Another pretty bland baked mac 'n' cheese recipe. I thought the onion was going to be weird in this one, but it actually added some dimension to the overall flavor. That said, though, it was a little dry and otherwise unremarkable. Come for the comfort food, stay because it's not that bad even though it's not that great."
