Chicken and White Bean Cacciatore



1 Tbsp olive oil
4 boneless, skinless chicken breasts (about 1 lb)
1 small onion, thinly sliced
1 clove garlic, chopped
1 (15.8 oz) can Great Northern beans, drained (or Cannellini beans)
1 (15 oz) jar marinara sauce

Using the handy-dandy bean strainer Matt got me when we went to the Bush's Beans Visitor's Center in Tennessee!


Heat oil in a 10-inch skillet over medium-high heat. Brown chicken with onion and garlic. Stir in beans and marinara sauce. Cover and simmer 7-10 minutes.

Pleasant, eh?

Served as a nice stand-alone supper.



My Rating: 3/5 "This looks nice, and it has a nice consistency. It's also nice on the digestive system. But it's missing some pizzazz, some flavor, something that makes it stand out. If you're into bland food, this is for you. But you might also want to mess around with some spices and see if you can add something to give it that wow factor."
