Dr. Harvey Mendess's Mother's Date Bars



10 to 12 ounces pitted dates, cut into small pieces
1 cup cold water
Juice of ½ lemon
¾ cup packed brown sugar
½ cup unbleached all-purpose flour
½ teaspoon baking soda
1 ½ cups rolled oats or oatmeal
1/3 cup canola oil

Combine the dates, water, lemon juice, and ¼ cup of the brown sugar in a saucepan and cook over medium heat until mushy. Set aside to cool.

Such sweetness.


Combine the flour, baking soda, and rolled oats in a small bowl. Mix and set aside. Preheat the oven to 350F.

Beat the canola oil with the remaining ½ cup brown sugar in a medium bowl. Add the dry ingredients and stir. Blend well.

Coat an 8-inch square pan lightly with butter-flavored cooking spray. Sprinkle lightly with half the dry mixture; pat down. 

Smoosh!


Spread the date mixture over it. Crumble the rest of the dry mixture on top.

Bake for 35 to 40 minutes, or until the top has browned and crisped.

Remove from the oven, cool, and slice into 2 x 1 inch bars. Remove from the pan with a spatula and arrange on a platter.

As you can see, the interior stays comfortingly mushy but it's still a cohesive bar that you can eat by hand.



My Rating: 4/5 "For all these are healthier cookies (although not as healthy as they would be without all the brown sugar, I suppose) they're quite sweet and delicious. The top and bottom are a little flimsy, but all of the layers have great flavor. Get more dates in your life!"
