Shrimp Salad

12 oz. cooked shrimp
1 cup thinly sliced celery
1 tbsp. finely minced onion
1 tbsp. fresh lemon juice
½ cup mayonnaise
Salt and pepper to taste
Romaine lettuce or mixed greens
Thinly sliced tomatoes (optional)

I never remember to thaw the shrimp until right before I need to start making a shrimp recipe.


In a medium bowl, mix shrimp with celery, onion, lemon juice, mayonnaise, and salt and pepper to taste. Serve on a bed of romaine lettuce and thinly sliced tomatoes or mixed greens.

I included the tomatoes purely for show.

My Rating: 4/5 "This is satisfying in a very particular old-fashioned mayonnaisey kind of way. It's also nice and cool and refreshing, and if you keep the tails on the shrimp there's some nice crunch to boost the celery texture. Obviously it's not the best idea to go around guzzling mayo, but it performs a nice unifying function here without being overwhelming."
