Fettuccine Alfredo



1 tablespoon butter
2 tablespoons minced yellow onion
2 cups heavy whipping cream
¼ cup freshly grated Parmesan cheese
¼ teaspoon freshly ground nutmeg
¼ teaspoon salt
¼ teaspoon ground black pepper
1 (12 ounce) package fettuccine

In large saucepan, melt butter over medium heat. Add onions and saute until softened (about 3-5 minutes).

Stir in whipping cream, cheese, nutmeg, salt and pepper. Bring to a boil; reduce heat and simmer 25-30 minutes, stirring frequently.

Meanwhile, prepare pasta according to package directions; drain. 

I used a gluten-free pasta. It was the only 12 oz. box of fettuccine I could find!


Toss pasta with sauce; sprinkle with additional cheese and fresh cracked pepper, if desired.

All mixed up and ready for action!

My Rating: 4/5 "I loved the nutmeg in this, and the fact that it had just enough pepper to be interesting. Nice and creamy - much better than the Alfredo sauce out of the jar. It could stand a titch more zazz, but overall it's extremely enjoyable."
