Slow Cooker Pot Roast with Sweet Potatoes



3 lb. boneless beef chuck roast
3 large sweet potatoes (or all-purpose potatoes), peeled and quartered (about 2 lbs.)
2 ribs celery, cut into 2-inch pieces
1 tsp. ground ginger
½ cup water
1 envelope beefy onion soup mix

Arrange beef, sweet potatoes and celery in slow cooker. 

Celery was an unusual pot roast addition for me, but it does get nice and tender as it cooks.


Combine remaining ingredients and pour over beef.

Cook covered on LOW 8 to 10 hours or HIGH 4 to 6 hours or until beef is tender. Thicken gravy, if desired.

And serve!



My Rating: 4/5 "The sweet potatoes and ginger add an unusual (but tasty!) accent to this roast. I cooked it on high so it didn't get as tender as juicy as it might have, but it was still easy to slice and easy to chew. Sometimes it's really satisfying to stuff your face with big bites of... of... MEAT."
